Who can resist cookie dough? Nobody. Which is why we’ve gone and turned it into a cupcake of dreams. These cookie dough cupcakes are so easy to make but the end result is irresistible. The recipe will make more cookie dough than you need to allow for nibbling along the way.
Prepare the cookie dough
Put the butter, caster sugar, muscovado sugar, egg, flour, bicarbonate of soda and salt in a bowl and mix until well combined, it should form a wet dough. Stir in half of the chocolate chips.
Make cookie dough balls
Take about a teaspoon of cookie dough and roll into a small ball, roughly the size of a 10p coin and place onto a tray or plate. Repeat until you have one ball for each cupcake and then put into the freezer to chill.
Prepare the cupcake batter
Make your cupcake batter. You can use any recipe you like, but I recommend our French Vanilla Cupcake recipe which will make about 24 cupcakes. Add the remaining chocolate chips to the cupcake batter.
Dough ball the cupcakes
Line a muffin tray with cases and use an ice cream scoop to put batter into each case. Remove cookie dough balls from the freezer and push one into the middle of each cupcake. Bake according to cupcake recipe instructions.
Prepare your frosting, I recommend our buttercream frosting but you can use any frosting you like. If you want the swirl effect we have used, you will need a piping bag and an open star nozzle. You can view our video on How to Frost Perfect Cupcakes here.
Dribble chocolate sauce onto your frosting, this is supposed to be messy. Take a tiny amount of leftover cookie dough and roll it into a small ball, then flatten it with your finger to look like a mini cookie for the top of the cupcakes.
