Two of the hottest trends in cakes right now are ombre cakes and ruffles – so I thought I’d put the two together to make this ombre ruffle cake. This is a really beautiful and elegant decorating technique which can be used for a wide range of occasions and looks.
While it may look fiddly, this technique is incredibly easy to do if you have the right equipment.
I only used a few basic tools to make this ombre ruffle cake.
First I stacked and filled four vanilla sponge cakes as normal, crumb coated and chilled.
Pipe a straight line around the bottom of the cake while you spin the turn table, you can do this as slowly or as quickly as you are comfortable, but squeeze faster than you are moving to allow the ruffles to fall – do this all the way round the cake.
Pipe a second line so the ruffles fall about half way up the first row.
It’s a good idea to blend the top of each row into the crumb coat as you go to make sure the ruffles stay firmly on the cake – otherwise if your frosting is too heavy they ruffles may pull away from the cake and leave a hole in the frosting.
I piped two rows of each shade before mixing white frosting into the blue to make it slightly lighter and repeated this all the way up.
