Gingerbread Muffin Recipe

For day two of my 12 Days of Christmas Baking I’ve made some delicious gingerbread muffins! This is a really easy recipe to make at home and doesn’t require any snazzy equipment or decorating skills. They are great for a treat or even a christmassy breakfast!

Ingredients
  1. 3 cups Plain Flour
  2. 1.5 cups Caster Sugar
  3. 0.5 cups Light Brown Sugar
  4. 1.5 cups Sour Cream
For the Muffins
  1. 1.25 cups Vegetable Oil
  2. 3 Large Eggs
  3. 1 tbsp Vanilla Extract
  4. 4 tsp Baking Powder
  5. 0.5 tsp Salt
  6. 4 tbsp Ground Ginger
  7. 1 tbsp Ground Cinnamon
  8. 1 tsp Ground Nutmet
For the Glaze
  1. 1 cup Icing Sugar
  2. 0.25 cup Cream Cheese
  3. 1 tsp Vanilla Extract
  4. 1-2 tbsp Milk
To Make the Muffins
  1. Whisk together eggs, caster sugar and brown sugar
  2. Add in the remaining liquid ingredients and whisk until combined
  3. Add the dry ingredients and whisk until combined
  4. Scoop into muffin cases and bake at 170 for 15 - 18 mins
To Make the Glaze
  1. Mix together all the ingredients in a bowl with a fork until there are no lumps
  2. Spoon over cooled muffins
